Dutch Oven Upside Down Cake (12 Inch Oven)
1/2 cup butter
1 cup brown sugar
1 20 oz can Pineapple slices
Keep the juice from the slices and add enough water to make 1 1/4 cups
8 maraschino cherries
1 yellow cake mix
3 eggs (or equivalent mix)
Melt the butter, put the brown sugar over that, put the pineapple rings over that. Put a cherry in the center of each slice. In a separate bowl mix cake mix, eggs, juice and water stir for 2 minutes. Put this on top.
350 degrees for 25 to 30 minutes. 6 coals on the bottom and 18 on top. Invert the oven and take it off the lid so that the cake stays on the lid. Pineapple stuck to the bottom will need to be extracted.
